Caribbean curry chicken with cauliflower

I really love curry. Growing up in the Caribbean, curry has always been a family favorite. This recipe brings together the delicious spices alongside some aromatic herbs and spices.



Makes 4-5 servings

This curry recipe has been absolutely delicious and a recipe recommended that your household would love.


2 x leg and thigh

1/2 boneless chicken breast

1/2 head cauliflower

3 chopped cloves garlic

1 diced onion

1/5 cup chopped pumpkin

3 medium potatoes peeled and chopped

1 Tbs coconut curry powder

1 cup chicken broth

1 cup of water

1 tbs butter

2 tbs dried rosemary

1 tsp garlic and herb

1 tsp paprika

1 tsp turmeric powder

2 Shadow Beni leaves chopped

Optional ( Add 1-2 scoops collagen powder & powdered bone broth)



Start by washing then seasoning your chicken. Season with dried rosemary, chicken rub, garlic and herb seasoning, a pinch of salt and pepper.

In a pan add your garlic with butter on medium heat and allow to get fragrant and cook for about three minutes. Next, add curry powder and cook for 3-5 more minutes. Add your onions next and sautee spreading curry around the pan for 5-6 more minutes.

Next, add your pumpkin, potatoes to your pot and stir around. Add broth and simmer, then add water bring to a boil. When the pot is boiling for a few minutes, turn down to low and simmer for 45 minutes, stirring occasionally so that nothing burns. Add cauliflower in the last 15 minutes. Serve while hot.

Enjoy with some pepper sauce and fresh tomato slices.
