Cucumber Salad Recipe

This week I’m sharing an easy and delicious salad that everyone can enjoy.

Salads are one of those great side dishes that are simply refreshing and cooling for the body. Cucumbers in particular are fabulous because they flush out toxins and cools down the body which is great when you live in the Caribbean where the temperature is almost always between 26-34 degrees Celsius.

Cucumbers also aid in weight loss, contain multiple numbers of B vitamins which are great for stress management and super hydrating due to their composition of 95% water.  They are rich in vitamin K, B, potassium, Vitamin C, manganese. They are also high in antioxidants which can help to reduce risk of cancer and other chronic diseases.

Apple cider vinegar is great for its alkalising properties and overall this super hydrating salad will leave you feeling refreshed and revitalised while taking care of your body!

Cucumber salad

3-4 Cucumbers
4-5 TBS Apple Cider Vinegar / Fresh squeezed lemon juice
1 stalk Chive
1.5 medium Onion
1 clove garlic
1 tsp Sea Salt
¼ tsp Ground/ cracked Pepper
All purpose seasoning
½ cup boiled sweet potato or green fig
1 tsp olive oil

Choose 4 washed cucumbers and cut off the ends. Take the cut off end and rub in circular direction where it will begin to foam a little bit at the top of the cucumber which is done to remove the bitterness. Next step is to slice and chop into smaller cubed like pieces and add to bowl.

Add diced sweet potato / green fig along with spices and seasonings. Add diced garlic, onion and chives. If you like a little ‘kick’, you can add some red pepper flakes. Toss up and serve cold as a side or on a hot day as a large refreshing salad.
